Lucy is a true hipster foodie- not the Instagram kind, but the kind who is fascinated by food systems, hates wasting food, and cannot help but share great meals with others. As a senior in high school, Lucy began work with food waste at La Soupe and hasn’t looked back since. Three years later, she graduated in May from Xavier with a double-major in Philosophy, Politics, and the Public and Economics, Sustainability, and Society. With experiences ranging from an expedition to the North Slope of Alaska, a Slow Foods exploration of Italy, two trips to the Harvard Food Waste Conference, a semester in Sweden, and nine months with Kroger’s Zero Hunger | Zero Waste social impact plan, Lucy cannot wait to jumpstart her career in food and sustainability.
